1. The "Rainbow Hut" Vegetable Soup
This recipe is a tribute to our name! It is packed with a spectrum of colours, each representing different vitamins and minerals that help in shaping young minds and bodies.

Ingredients:
- 1 tbsp olive oil
- 1 small onion, finely diced
- 2 carrots, peeled and sliced (Orange for Vitamin A!)
- 1 sweet potato, diced
- 1 cup broccoli florets (Green for iron!)
- 1 cup red lentils (rinsed)
- 1L low-salt vegetable stock
Method:
- In a large pot, sauté the onion in olive oil until soft.
- Add the carrots, sweet potato, and lentils. Stir for a minute to coat them in the oil.
- Pour in the stock and bring to a gentle boil.
- Reduce heat and simmer for 20 minutes. Add the broccoli in the last 10 minutes.
- Use a stick blender to create a smooth, velvety texture that is easy for tiny tummies to digest.

2. Nurturing Pumpkin & Red Lentil Creamy Blend

Ingredients:
- 500g pumpkin, peeled and diced
- 1 large carrot, diced
- ½ cup red lentils
- 1L water or low-salt chicken stock
- A dollop of Greek yoghurt (for serving)
Method:
- Boil the pumpkin, carrot, and lentils in the stock until everything is very soft (about 25 minutes).
- Blend until completely smooth.
- Stir in a little milk or yoghurt just before serving to add a boost of calcium.

Ingredients:
- 1 chicken breast, finely shredded (or use pre-cooked roast chicken)
- 1 stalk celery, finely diced
- 1 zucchini, grated
- ½ cup alphabet pasta
- 1.2L low-salt chicken stock
Method:
- Sauté the celery and zucchini in a little oil.
- Add the stock and shredded chicken. Bring to a simmer.
- Add the alphabet pasta and cook according to the packet instructions (usually 5-7 minutes).
- Serve warm, and encourage your child to find the first letter of their name!
This soup is a perfect example of how we combine fun and learning. It supports school readiness by making letters familiar and exciting.
