Today, we are opening the doors to the Rainbow Hut Kitchen to share some of our favorite, dietitian-approved winter snack recipes that you can easily recreate at home. Whether your child is in our Penguins Room (0-3 years) or preparing for the big transition in our Koalas Room (3-5 years), these recipes are designed to be both delicious and developmentally appropriate.

Winter Wonder Recipe #1: "The Golden Glow" Pumpkin & Red Lentil Soup
This soup is a staple in our centres. It’s packed with beta-carotene for eye health and lentils for that all-important iron and protein.
Ingredients:
- 1 cup diced Australian Blue Pumpkin
- 1 small carrot, sliced
- ¼ cup red lentils (rinsed well)
- 2 cups low-salt vegetable stock
- A tiny pinch of mild cumin (to introduce subtle multicultural spices)
Method:
- In a small pot, gently sauté the pumpkin and carrot in a drizzle of olive oil until they smell sweet.
- Add the lentils and stock. Bring to a gentle boil, then simmer for 15 minutes until the vegetables are meticulously soft.
- Blend until smooth. At Rainbow Hut, we serve this in small, easy-to-grip silicone cups: perfect for our Penguins to practice their drinking skills!

Winter Wonder Recipe #2: Zucchini & Cheddar "Growth" Muffins
Savoury snacks are a fantastic way to sneak in extra greens while providing the slow-release energy needed for a busy day of School Readiness activities.
Ingredients:
- 1 cup grated zucchini (squeezed dry to keep the muffins fluffy)
- ¾ cup wholemeal self-raising flour
- 1 large egg
- ½ cup grated mild cheddar
- 2 tbsp olive oil or Greek yoghurt
Method:
- Preheat your oven to 180°C.
- Whisk the egg, oil, and yoghurt together. Fold in the zucchini and cheese.
- Gently stir in the flour. Remember, we want a nourishing texture, so don't overmix!
- Spoon into mini-muffin tins and bake for 12–15 minutes.
These are great for lunchboxes if you are visiting one of our locations in Blacktown or Prestons for a stay-and-play session!
Winter Wonder Recipe #3: Warm Cinnamon Apple "Oat-ies"
Nothing says winter like the scent of cinnamon. This snack is wonderful for shaping young minds to appreciate natural sweetness over processed sugars.
Ingredients:
- 1 medium apple, grated (Pink Lady or Granny Smith work beautifully)
- â…“ cup rolled oats
- ½ cup of your child’s preferred milk
- A dusting of cinnamon
Method:
- Combine all ingredients in a small saucepan over low heat.
- Stir constantly for about 5 minutes until the oats have absorbed the milk and the apple is tender.
- Serve warm. This snack is a favorite in our Koalas Room, where children often help "measure" the oats, building their early numeracy skills as part of our Early Years Learning Framework (EYLF).
